Canary Café Expands Its Selection of Texas Wines


DALLAS – (June 22, 2009) – Canary Café’s Chef Gorji travels the Texas Hill Country visiting wineries that specialize in Mediterranean wines to complement his New Mediterranean entrees. This wine-tasting trip, which takes places over the July 4th weekend, is in preparation of Canary’s 6-year anniversary in July culminating in a special wine pairing. Canary Café is a member of the GO TEXAN Restaurant Program, established in January 2008 as a part of the Texas Department of Agriculture's GO TEXAN Certification Program, which links participating Texas restaurant establishments to local producers and other Texas-grown or processed food products to bring the quality of Texas to the table (gotexan.org).

“Local markets and specialty grocers are among my daily stops before preparing Canary’s fare each night,” said Chef Gorji. “Now I’m excited to meet Hill Country growers and vintners and learn more about Mediterranean style wines produced in Texas.”

Gorji’s Texas dishes with New Mediterranean twists include his award-winning ribeye steak with pomegranate crème sauce and fresh pomegranates and Mediterranean chili. Gorji prepares dishes from the entire Mediterranean area including Southern France, Spain, Italy, Greece, Israel, Lebanon, Turkey, and northern Africa. His “New Mediterranean” cuisine is upscale, modern cooking using prime cuts of meat with abbreviated cooking times to bring out the natural flavor of food.

Canary Cafe specializes in New Mediterranean cuisine using fresh ingredients and simple techniques.
